I am faulty sure Qatar just uses Thales/Geofusion for these in flight maps. And there has been complaints regarding other airlines, like Jet Blue who don’t even fly there, about this mapping too.
The simple answer is… these maps are just a bit shit.

It’s not a grand conspiracy, the maps have Palestinian Territories for the West Bank and I’m fairly sure the label for “Israel” is usually there when looking top-down.

It doesn’t show (list) Egypt (South Sinai Governate) neither, which is all that land to the left. This map is from the point of view of the north Red Sea, looking North with Jordan to the East and Egypt to the West.
