This is how I’ve always done them. Mix up some salsa and refried beans, spread over each chip then slices of pepperoni, cheese, jalapeno, black olive. Pop them under the broiler till cheese melts. Relocate to the couch, eat way too many and feel like a disappointment the remainder of the evening.

This is actually the original way nachos were made – just add a dribble of salsa and Jalapeno slices on each nacho.
My mom in the early 80s tried to recreate the nachos she had while in Acapulco in 82. All we had were yellow corn round nachos. No salsa, so she subbed tomato sauce, and no jalapeños so subbed minced bell peppers. With shredded cheese on top. Broiled in the oven. While they were not “nachos” they were my first introduction as a young child in the frozen windswept prairies of Canada, and they were actually delicious in their own way. I can still taste them.

It’s kinda bothering me that they didn’t use some sort of circle cutter to cut the cheese, but otherwise this is great.

Alton Brown did (basically) this on Good Eats! He also put tin foil balls in the corners of the pan and stacked wire racks to make more layers of individually-cheesed chips.
You can do the same thing with crackers. Spread them out like this, tiny piece of cheese on each, then melt. Add a slice of mushroom or piece broccoli to each for fanciness. Or a slice of meat like pepperoni/ring balogna/etc. Just stay away from fatty meats or they get soggy.
